Pecorino Cacio di Fossa produced by the Il Forteto Agricultural Cooperative is an Italian cheese matured in a tuff pit for about 6 months. It is a pure sheep cheese obtained thanks to an original and very ancient seasoning process. The pecorino is placed in the tuff pits of Sogliano al Rubicone, inside canvas sacks in mid-August to remain buried there until November. This maturing process transforms the cheese: it loses its round shape due to compression and prolonged maturing causes further loss of whey and fat, increasing its digestibility and giving it a spicy flavor and an unmistakable aroma. This product can be consumed by all individuals, except those allergic (or intolerant) to milk and its derivatives. The rind has a deep straw yellow color, with lighter or orange shades, while the paste is a deep straw yellow color, but with ocher streaks. The flavor is lively and savory and has a medium lumpy perception on the palate. To fully grasp the goodness of Pecorino Cacio di Fossa we suggest you combine it with chestnut honey and dried fruit.
