The Pecorino "Cinerino" produced by Rocca Toscana is a hard Italian sheep's milk cheese, aged for 2 months under ashes and to be consumed within 3 months. Creaminess and delicacy embellish "Cinerino", a full-flavored cheese matured under ashes, as it once was, which aromatically enriches the flavor giving it typical hints. The ash, in fact, dries the internal humidity of the pecorino, leading the pasta to have a more crumbly consistency, from which the real flakes can easily be obtained.
