Campì with fennel seeds made by the Quattro Portoni dairy is a ready-to-use Italian cheese, made with buffalo milk, aged for at least 2 months and enhanced by the fresh and unmistakable flavor of fennel seeds. Its shape is cylindrical, the rind is clean, straw yellow in color and dotted with fennel seeds. The cheese is compact, soft, elastic, with few holes. The color ranges from white to ivory, again with speckles of fennel seeds. The salting is in brine and the flavor of the cheese is spicy and balanced, with an aroma of fennel. The spiciness, however, does not cover the enveloping taste of Campì. It should be consumed preferably within 35 days.
