Surfin'Blu is an original buffalo cheese made from the start from the best forms of Blu di bufala ripe at the right point, refined with Surfing Hop, a craft beer produced by the Toccalmatto brewery, richly hopped and with an important alcohol content (8.5%). The particular refinement technique, which lasts for at least 60 days, gives the Surfin 'Blu an unmistakable aroma on the nose which, combined with a unique creaminess, allows you to appreciate the typical taste of Blue cheeses for a long time, enriching it with sweet and fatty notes. Cheese with from soft to crumbly paste depending on the ageing, with a light cream colour and the typical blue veins of the marbled cheeses. Rind: wrinkled, dry, with a grey amber colour. The aroma has an acid lactic note. The taste is distinct, with average intensity. It is perceived the aroma of the beer, which is well amalgamated with the sweetness of the milk. As the maturation goes on, the hint of spicy is increased.
