A pig’s leg can become San Daniele ham only on three conditions: first of all, the legs must come from pigs bred in one of the ten Northern and Central Italian regions (Friuli Venetia Julia, Venetia, Lombardy, Piedmont, Emilia Romagna, Tuscany, Latium, Abruzzi, Marche, Umbria). Secondly, the particular processing coming from an old tradition must be followed. Finally, maturation must be done in San Daniele, Friuli. It is boned and rind-free. It comes already prepared and ready to sell.
