Straight from Tuscany, here is the Chianina Bresaola, made with IGP Vitellone Bianco beef from the central Apennines of the Chianina breed. Obtained from the salting of cut pieces of meat, salted in vats at a controlled temperature for 14 days, dried and flavored with spices and aromas. The method and timing of aging ensure that the typical flavor and texture characteristics are preserved. Manufactured by Antica Lavorazione Carni. Here it is sold in 1.5kg format and must be used within 11 weeks.
