“Carne salada” (salted meat) is a typical delicacy from the Trentino region, obtained from the best cut of the adult ox, namely the loin, which is treated with a few but very effective manual operations. “Carne Salada” is prepared by leaving the beef to marinate in wooden recipients filled with brine that has been flavoured with spices and vegetables. The loin, completely steeped in brine, is put into special refrigerated places, once of a day in cellars, for about 20 days. This maturing process keeps the meat very moist, which is what makes it particularly soft and easy to digest. To be eaten within 4 days after being taken out of its original packaging.
