Description
Ravioli with burage are a typical first course of the Italian culinary tradition, precisely from Liguria, made from egg pasta filled with tasty ingredients. They are, in fact, small boxes of fresh homemade pasta, with a square shape, filled with borage and cheese. These ingredients give the dish a natural and light taste, as well as a delicate and fresh flavor. The color and flavor of the dough, on the other hand, are those typical of egg pasta. Their appearance is therefore characterized by very pale yellow tones and the surface is smooth and without tearing. The ravioli with borage made by Pastificio FB are obtained by rolling in two sheets of a dough of durum wheat semolina, soft wheat flour, eggs and water, and are stuffed with a filling based on borage, beef and pork, cheese, pecorino romano DOP, pistachios and other ingredients. To ensure the highest quality and safety of the product, after forming the dough is subjected to a pasteurization heat treatment and, subsequently, it is packaged in a protective atmosphere. The package consists of 5 ravioli bags of about 200 g each, for a total of about 1 kg of product, to be consumed preferably within two weeks. Cooking times are only 3 minutes. To make ravioli with borage even more special and tasty, they are usually served accompanied by a sauce based on butter cream and sage. Alternatively, they can be dressed with an exquisite walnut cream, with a cream based on seasonal vegetables, with sauce or with simple Genoese pesto.

Filling 40%: braised meat [beef, veal, pork, onions, carrots, bacon (pork bacon, salt, dextrose, spices, flavorings, antioxidant: E301, preservatives: E252, E250), extra virgin olive oil, salt, aromatic plants], semi-finished borage 20% (borage 98%, vegetable fibers, salt), browned beets (beets, butter, onions, extra virgin olive oil, salt), fresh grated cheese (milk, salt, rennet, lysozyme from egg), mortadella (pork, pork tripe, salt, pistachios, sucrose, spices, flavorings, antioxidants: E300, E301, preservative: E250), breadcrumbs (type "0" soft wheat flour, brewer's yeast, salt) , pecorino romano DOP (sheep's milk, ale, rennet), salt, aromatic plants, spices. Sprinkle with rice flour.
