The Caprese cake is one of the sweet icons of traditional Campania pastry. It was born in Capri around 1920, by the hand of Carmine Di Fiore. What not everyone knows, however, is that the caprese is the result of a mistake: the pastry chef, in fact, forgot to add the flour to the dough. Once the cake was baked, however, he realized the goodness and uniqueness of this new cake. It is a simple and gluten-free chocolate cake, characterized by the unmistakable flavor of almonds. The Classic Caprese Cake created and packaged at the two Michelin-stars Cannavacciuolo Laboratory is made with the vasocottura technique (backed in a jar): a technique that allows you to keep moisture and aromas inside the jar and to have a fresh product until the moment of opening. The ingredients underlying the recipe are the passion for simple tastes and particular attention to craftsmanship, aimed at enhancing the flavor of the raw materials to obtain a high-level gastronomic product. The shelf life of the cake is 4 months and must be stored in a cool and dry place, away from heat sources.
