The Chianina, famous all over the world, is a typical Italian cattle breed from Arezzo and Siena, which was once used as a draft horse, but is now bred exclusively for meat production, owes its name to the Val di Chiana and is generally considered the native breed of central Italy (Lazio, Tuscany and Umbria). It comes from the cut of the loin of white beef from the Central Apennines, precisely of the Chianina breed. It is named "T" for the shape of the bone in the middle, dividing the fillet on one side and the roast beef on the other. This cut, combined with the special preparation of the steak, makes Florentine one of the most famous and popular dishes of Tuscan cuisine.
