The Chianina, known throughout the world, is an Italian cattle breed typical of the regions of Arezzo and Siena. In the past it served as a motor, today it is bred exclusively for meat production. It owes its name to the Val di Chiana and is generally considered an indigenous breed of central Italy (Lazio, Tuscany and Umbria). By the term Florentine steak, on the other hand, we mean the cut from the loin side of the prime rib (12-24 months) IGP "Central Apennine White Beef" of the Chianina breed. This cut, combined with the special preparation of the steak, makes Florentine one of the most famous and popular dishes of Tuscan cuisine. It is a high cut, including the bone, which is best grilled and eaten "rare". Here it is sold in 1.1 kg format and must be consumed within 11 days.
