Description
The "Trecce" with truffle by Pastificio F. Barosi are very tasty braid-shaped tortelli, which hide inside a delicious ricotta and truffle filling. The product is made with fresh egg pasta obtained from the lamination of a dough of durum wheat semolina, soft wheat flour, egg and water, and filled with a delicious cream based on ricotta, truffle and other ingredients. Each tortello is folded by hand and subjected to a pasteurization heat treatment and then packaged in a protective atmosphere to ensure the quality and safety of the product. The cooking time is only 2 minutes, and it is advisable to consume the "Trecce" within 2 weeks. It is customary to accompany ravioli with a sauce based on butter and sage. The original name of this dish is "turteil cun cuà", that is to say "tortelli with a tail" in the Emilian dialect, due to its elongated and unusual shape: a braided closure with a final tail. Filling 45%: fresh cow's milk ricotta (whey, milk, salt), fresh grated cheese (milk, salt, rennet, egg lysozyme), truffle preparation 8% (Champignon -Agaricus Bisporus-, corn oil, water, summer truffle 1.5% (Tuber Aestivum Vitt.), salt, flavourings, dried porcini mushroom (Boletus Edulis and family), dehydrated potatoes, aromatic plants, aqueous extract of truffle (Tuber aestivum Vitt.)), breadcrumbs ( type "0" soft wheat flour, brewer's yeast, salt), salt, truffle semi-finished product (dextrose monohydrate, salt, flavourings, anti-caking agent: silicon dioxide) 0.7%, preservative: sorbic acid.
