With its unmistakable and intense flavour, this cheese has a compact texture dotted with chopped walnut kernels that give it a characteristic lingering aftertaste. The paste varies in colour from the typical light brown in the fresh product to a pale purple-brown in the more mature product. It is ideally tasted with fresh fruit or honey.
