Buffalo mozzarella is a soft and spun paste fresh cheese, made with pasteurized buffalo milk. It has a smooth surface and a very thin skin, it is of a porcelain white color and the paste has a thin leaf structure, slightly elastic in the first 8-10 hours from production and more melting later on. The flavor is distinctive and delicate, aromatic and fragrant, with a faint hint of musk. The smell, on the other hand, recalls that of lactic ferments. The term mozzarella derives from the name of the mozzing operation carried out to separate the dough into individual pieces.
