Mun is a semi-soft, medium-aged cheese produced with pasteurized cow's milk from at least two consecutive milkings. Rectangular in shape. The rind is thin, gray-brown in colour. The matured wheels may have yellow and red colored molds. Inedible rind treated with E150a (caramel). The paste is white in color with straw-yellow shades and has widespread, thin and regularly distributed holes. The taste is sweet, pleasant and delicate. The wheels are matured for 45-120 days in underground environments on white fir stairs.
