Description
Pecora Blu is a semi-hard, long-aged cheese produced with pasteurized sheep's milk with the addition of selected molds. Cylindrical in shape, it has a grey-brown rind and often characteristic white molds. The holes drilled to facilitate marbling are visible on the plate. Inedible rind. Inside, the paste is white with straw-yellow shades. The internal part is more compact and crumbly while the external part close to the crust is creamy. There are typical blue veins. The flavor is spicy and intense. The wheels are matured in cool, humid environments on white fir stairs for a period of 60 days.
