Alta Badia, produced by Latte Montagna Alto Adige Soc. Agr. Coop, is a hard cheese made from cow's milk that has been aged for 180 days (6 months). The cheese is light yellow or yellow, compact and without holes, while the rind is brown and inedible. The consistency is hard, the smell is intense and the taste is rich and spicy. This product does not contain ingredients or materials derived from Genetically Modified Organisms (GMOs), according to current legislation EC Regulation n. 1829/2003 and EC Regulation n. 1830/2003 and subsequent amendments. Furthermore, the South Tyrol symbol guarantees the quality and the authenticity of its origins. Alta Badia hard cheese can be tasted sliced on its own, accompanied with various jams and marmalades, transformed into fondue, or it is also indicated as a condiment for pasta. The flavors that best describe the unmistakable taste of Alta Badia are those of mushrooms, speck and radicchio. Here you can buy half a wheel of cheese, weighing about 5 kg, packaged in a protective casing, to be consumed within a month. Alta Badia contains milk and eggs, although it is naturally lactose-free, as a result of the production process.
