Description
The "trecce alla piacentina" from Pastificio FB are very tasty tortelli in the shape of a braid, which hides a delicate ricotta and spinach filling inside. The product is made with fresh egg pasta - obtained from the lamination of a dough of durum wheat semolina, soft wheat flour, egg and water - filled with a delicious cream based on ricotta, spinach, cheeses and others ingredients. Each tortello is folded by hand and subjected to pasteurization heat treatment, then packaged in a protective atmosphere, to ensure quality and safety of the product. Cooking times are only 2 minutes and it is advisable to consume the braids within 2 weeks. As the name suggests, this dish originates from the city of Piacenza. Initially they were served without seasoning, but today it is customary to accompany ravioli with a sauce based on butter and sage. Alternatively, another condiment idea is a cream of butter, pine nuts and raisins. The original name of this dish is "turteil cun cuà", that is "tortelli with a tail" in the Emilian dialect, due to the elongated and unusual shape: a braid closure with a final tail. Filling 45%: fresh cow's milk ricotta 61% (whey, milk, salt), browned spinach 19% (spinach 90%, butter, onions, extra virgin olive oil, salt), freshly grated cheese (milk, salt, rennet, egg lysozyme ), Mozzarella (milk, salt, microbial rennet, lactic ferments), breadcrumbs (type "0" soft wheat flour, brewer's yeast, salt), salt, preservatives: sorbic acid, spices, sprinkle with rice flour.
