Gratin Blu is a semi-hard, long-aged cheese produced with pasteurized whole cow's milk with the addition of selected molds. Cylindrical in shape, it has a brown rind and often characteristic molds. Inedible rind. Inside, the paste is white and compact but melts in the mouth. It has characteristic and widespread blue streaks. The flavor is a delicate balance between the notes of butter and the spiciness determined by the marbling.
